RECIPES
Sweet Rice Waffles
¼ cup shortening or olive oil
1 tbs sugar or raw sugar
1 egg (large) or 1 tbsp flax meal + 3 tbsp water
½ cup sweet rice flour
½ cup whole grain brown rice flour
1 tsp baking soda
1 tsp baking powder
2 tbsp water
1 tsp lecithin
1 cup soy milk
Cream shortening and sugar together
Add eggs, mix well
Add sweet rice flour, brown rice flour, baking soda, and baking powder
Mix until well blended
Add soy milk and water, mix well
Add lecithin, mix for two minutes at medium speed
Cook for 3-4 minutes on waffle iron or griddle.
Spelt Pancakes (not GF)
2 cups Spelt flour
2 tbsp baking powder
1 ¾ cup water or 2 cups nut milk
1 egg or 1 tbsp flax meal + 3 tbsp water
1 tbsp maple syrup
3 tbsp olive oil
Mix well and cook on griddle.
Whole Cranberry Sauce
2 oz bag of cranberries
1 cup raw sugar
1 cup water
Boil rapidly until all berries are popped open (about 5 minutes)
Allow to cool
Makes about 4 cups
C.W. & R. Pie
Use Whole Cranberry Sauce recipe (above)
1 cup Wolf berries (GOJI berries)
½ cup raisins
Will make enough to fill 2 baked pie shells and have some sauce leftover for side dish.
Berry Pie
3 cups berries
¾ cup raw sugar
½ cup flour
Bake for 1 hour in preheated oven at 350 degrees
Great Dump Cake
1 cup raw sugar
1 egg
2 large tbsp shortening
2 tbsp Black Strap Molasses
1 tsp cinnamon
1 tsp nutmeg
½ tsp cloves
1 cup raisins
2 cups spelt flour (not GF) or 1 cup millet (GF), and 1 cup soy flower (GF)
2 tsp baking soda dissolved in 1 cup boiling water
Dump all ingredients in bowl and mix thoroughly.
Add batter to large round cake pan or two small pans
Bake at 350 degrees for 50 minutes in large pan or 35 minutes in two pans
Apple Whole Grain Muffins
¼ cup flax seed meal
½ cup whole millet
¾ cup whole grain rice flour
¾ cup whole spelt flour
½ cup raw sugar
2 tsp baking powder
½ tsp baking soda
pinch of sea salt
1 egg, or ¼ cup apple sauce, or 1tbsp flax meal + 3 tbsp water
1 - 1½ cups finely chopped apple
3 tbsp olive oil
½ cup of your choice of milk
optional ¼ cup nuts, chocolate or carob chips
Preheat oven to 400 degrees
Mix ingredients together in a bowl (batter will be thick)
Fill well greased muffin pan 2/3’s full (makes twelve)
Bake for 18-20 minutes or until top springs up when touched.
Makes 12 muffins
Banana Bread
2 cups whole spelt flour
1 cup whole grain brown rice flour
1 tsp baking powder
1 tsp baking soda
¾ cup olive oil
2 cups raw sugar
6 well ripened mashed bananas
4 eggs or substitutes
1 ½ tsp vanilla (optional)
Preheat oven to 325 degrees
Mix all ingredients together
2 large pans bake for 1 hr 20 minutes or 3 small pans for 1 hr or until toothpick inserted in middle of bread is clean
Rice Muffin or Cut apart cookies
1 cup rice flour
¼ cup rice bran
¼ cup whole millet
¼ cup flax meal
¼ cup of black strap molasses or 1/3 cup raw sugar
½ cup rice milk
1 egg or substitute
¼ cup olive oil
1 tsp lecithin
2 bananas mashed well
2 tsp baking powder
½ tsp baking soda
Bake at 400 degrees 12-15 minutes for cookies or 18-20 minutes for muffins.
Check on them before the alloted time because oven temperatures vary and there are no light flours in this recipe. Berries or chips go well in this as well.
Baking Powder Biscuits
6 cups spelt flour
9 tsp baking powder
3 tsp sea salt
½ cup raw sugar
1 cup shortening
2 ¼ cup soy milk
Mix in order, roll out and cut (use a cup or glass for a molder)
Bake at 350 degrees for about 20 minutes
Bread
10 ounces of water about 80 degrees or so
2 tbsp non GMO butter spread
3 1/3 cup spelt flour
2 tbsp non dairy creamer or powdered goat milk
2 tbsp raw sugar
1 ¼ tsp sea salt
2 tsp active dry yeast or
1 ½ tsp Bread machine / fast rise yeast
Simple Meatloaf
1 pound ground burger placed in center of bread pan
Cover ½ ground burger with water
Cover ½ burger with Bragg’s Liquid Amino’s
Sprinkle with your favorite herbs
Use minced garlic, cilantro, basil, sage, onion, minced red pepper, rosemary, and thyme
Bake in oven for 45-60 minutes at 350 degrees
Left over broth can be thickened with spelt flour to make a savory gravy.
Cheese Ball
1 tub dairy free cream cheese
½ cup dairy free sour cream
½ cup chopped onion
1 package of dairy free shredded cheese
can add meat or nuts
Blend all together in blender or food processor and put in dish for dipping chips, crackers, breads, and veggies etc.
If it appears to be to thick thin with a little soy or nut milk.
Salad Dressing
½ ounce cider vinegar (optional)
¼ ounce Bragg’s Liquid Amino ‘s
sprinkle in your favorite herbs
juice from ½ a lemon
4-6 ounces of olive oil
shake well and enjoy on your favorite salad

Very Berry Young Bread Banana Berry Bread
The original recipe not GF Converted recipe GF
Combine:
¾ cup brown rice flour ¾ cup brown rice flour
1 ¼ cup barley flour 1¼ cup buckwheat,soy,or
millet flour
1tsp baking soda
pinch of salt
Add
2/3 c. Blue Agave
2 bananas, lightly mashed
½ cup blueberries or wolfberries
1/3 cup unsweetened applesauce
½ tsp vanilla
5-6 Tbs. Berry Young Juice, I used 6 Tbsp of Bolthouse Farms
Strawberry Banana Juice
2 eggs
1/3 cup canola oil 1/3 cup olive or grape oil
Beat ingredients on medium-high until well combined. Pour batter into well greased ban lined with wax paper. Put pan on middle shelf of oven and bake for about one hour in a oven preheated at 350 degrees. When bread is done, take out of oven and let set for 5 min. or so and then turn out onto a paper towel and remove wax paper.
Quinoa Applesauce Cake
1 ¾ cup quinoa flour (I use rice flour)
1 cup dried fruit
½ cup chopped nuts
½ tsp baking soda
½ tsp baking powder
½ tsp salt (I usually don’t use salt but if I do it’s sea salt)
½ tsp ground cloves
2 cups unsweetened applesauce
1 large egg
1 cup of raw sugar
½ cup butter substitute or olive oil
Preheat oven to 350 degrees F. Sprinkle ¼ cup of flour over nuts and dried fruit and let set aside. Blend the baking soda, baking powder, salt, and cloves with the remaining flour, add the fruit and nut mix and the applesauce. Beat in the egg and mix sugar and butter (or oil) in thoroughly.
Spoon into an oiled 8x8 inch cake pan and bake for 40 to 45 minutes or until the cake tester inserted in the center comes out clean.
Rice Bread
1 cup soy or millet flour
3 cups brown rice flour
4 tablespoons baking powder
½ teaspoon sea salt
½ cup rice syrup
2 eggs, separated
1 cup soy, rice, hemp, or almond milk
½ cup yogurt (I used Tofutti sour cream)
4 tablespoons safflower, olive, or grape oil
Combine all dry ingredients. Whip egg whites until stiff but not dry. Beat yolks until creamy. Add the syrup, milk and oil to dry ingredients, mix well. Add yolks and mix well. Fold in egg whites. Bake @ 350 degrees for about one hour in well-oiled bread pan.
Four Grain Gluten Free Banana Bread
1 cup Soy flour
1 cup buckwheat flour
1 cup whole grain brown rice flour
1 tsp baking powder
1 tsp baking soda
¾ cup olive oil
2 cups raw sugar
6 well ripened mashed bananas
4 eggs or substitutes
1 ½ tsp vanilla (optional)
1-2 tablespoons whole millet (for sprinkling on top of loaves)
chocolate chips or nuts are optional to add.
Mix all ingredients together and bake in preheated oven @ 325 degrees. 2 large pans for 1 hr to 1 hr 15 minutes or till you can poke a toothpick in the middle and it pulls out clean.
Pumpkin Bread 1 cup Millet Flour (GF)
2 cups whole spelt flour(not GF) 1 cup Buckwheat flour (GF)
1 cup whole grain brown rice flour
1 tsp baking powder
1 tsp baking soda
¾ cup olive oil
2 cups raw sugar
2 cups cooked pumpkin
4 eggs or substitutes
1 ½ tsp vanilla (optional)
Mix all ingredients together and bake in preheated oven @ 325 degrees. 2 large pans for 1 hr 20 min. or 3 pans for 1 hr or till you can poke a toothpick in the middle and it pullsout clean.
Muffins
You can use any of the banana breads or pumpkin bread recipes and put the batter in muffin tins instead of bread pans and bake @ 400 degrees for 16-18 minutes.
Homemade Chocolate Pudding
1 cup raw sugar
1/2 cup baking cocoa
1/4 cup arrow root powder
1/2 teaspoon salt
4 cups milk product
2 tablespoons butter or margarine
2 teaspoons vanilla extract
In a heavy saucepan, combine sugar, cocoa, arrow root powder and salt. gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. Sprinkle with chocolate chips if desired. Yield: 6-8 servings.
Chocolate Almond Butter Pie
½ to ¾ bag of chocolate chips
¾ cup almond butter
½ cup milk of choice
¼ cup of butter, margarine, olive oil, ect
Melt and mix all ingredients together in a pan. When everything is creamy with no lumps, poor into small cooked pie shell. Pie will be thick.
Option 2= use a large cooked pie shell and poor chocolate or vanilla pudding on top after the chocolate and almond butter is cooled. When pudding is cool, coat top of pudding with soy whip topping.
Adzuki Dinner Bread
1 cup of Quinoa Flour
1 cup of Millet Flour
¼ cup of honey or aquave nectar
3 tsp baking powder
2 tsp baking soda
8 ounces of adzuki beans (cooked)
½ cup flax seed meal
4 eggs
4-6 ounces of goat feta cheese
¼ cup Italian seasoning
add garlic powder and red pepper to taste
Bake @ 350 for 15-20 minutes for mini loafs and about 30 minutes for a full loaf.
Check your bread often, these grains cook fast.
Banana Quinoa Muffins
½ cup Quinoa flour
½ cup Quinoa flakes
2 tbsp Honey
2 tsp baking powder
2 tsp baking soda
½ tsp Salt
2 ripe bananas
2 eggs
Bake at 375 for 18-20 minutes. Fill greased muffin tins about ½ full.

Brown Sugar- ¾ cup date sugar and ¼ cup honey
milk- soy, rice, goat, or almond milks
Wheat- Spelt
egg- honey, apple sauce, flax meal (1 tablespoon of flax meal plus 3 tablespoons water)
Soy sauce or Tamari sauce- Bragg’s Liquid Amino ‘s
Oils can be replaced with flax meal at a 3-1 ratio.
Butter/Margarine- in most recipes Olive oil replaces it well.
Shortening - Olive oil works well for this often too.
Sweet Potatoe Salad
3 sweet potatoes
4 eggs
2 stalks celery, chopped
1/2 onion, chopped
3/4 cup dairy free mayonnaise (I use veganaise)
1 tablespoon prepared mustard
1 teaspoon raw sugar
about 6 radishes
add soy, rice, hemp, almond, or goat milk to desire creaminess
season to taste (garlic, red pepper, parsley, basil, ect)
